Okay, it's started. The great Christmas baking has arrived. Time for me to get off my butt and make the gift cookies, or else the gift cookies will be in tremendously short supply.

First up (and this one is a new one for me): Bizcochitos.

Bizcochitos are a traditional Christmas cookie in New Mexico. They're apparently designed to go well with red wine, and having sampled a couple, I can see why. This recipe (and this is very much an "everyone's got their own way to make them" sort of thing) are sort of like a floury shortbread (or the texture of those Pecan Sandies cookies), flavored with orange zest and anise, and sprinkled with cinnamon sugar. Mine are in tree-shapes. They are quite tasty and not very hard (although picking up a silicone mat helped tremendously).

I have to say, I approve. I'm not a huge fan of anise, but it's not overpowering and is nicely balanced by the hint of orange and the cinnamon. I will be making these again.
