Well, I've been cooking recently, and I have to say that it's just so nice not to be eating out or eating frozen food all the damn time. Don't get me wrong, I love a good restaurant, but I don't love what grabbing food here and there does to my budget, especially when it's for all four of us on a regular basis. Yeep.
So I've been making weekends my cooking time, where I try and get things together enough to plan for the week ahead (or two). I've got some staples like spaghetti and fish sticks and stuff that the kids will eat and like, but I'm not limiting myself to that. This weekend I made Orange Teriyaki Salmon and stir fried some broccoli and carrots with soy sauce and sesame oil. It was my first time making it, and it came out pretty darn well, if I do say so myself. Will didn't care for the salmon, but I didn't think he would. He's not generally partial to fish. The rest of us liked it, though.
Of course, I don't always get everything done in advance, and some things are better cooked right before you eat them. Yesterday I ended up making hoisin barbequed chicken and stir-fried broccoli in oyster sauce. The kids couldn't cope with the sticky barbeque sauce on the chicken pieces, but they liked the meat once we cut the pieces off the bone. Everyone liked the broccoli, especially with rice.
It's just really very nice to be taking control of things in my life again, and to be cooking good food and feeling as though I'm doing something right for my family. I've really missed that feeling.
